Dehydrating is one of the simplest ways to turn spare fresh produce into food that keeps for months in a sealed jar. A low-wattage stacking unit is an easy, inexpensive way to start.

Electrical safety: Rated 220–240V, 50Hz. Neither the supplier nor Devanti's product page states the plug type, so please check it has an Australian (SAA-approved) plug when it arrives and before first use. Use it on a stable, heat-resistant surface with clear space around the vents, don't cover it while running, keep the cord away from water and heat, and unplug before cleaning. As there is no timer, don't leave it running unattended for long periods.

Food safety for jerky: Drying alone does not reliably kill bacteria in raw meat, and this unit's maximum setting is 70°C. Food-safety guidance (USDA FSIS) is to heat beef and other red meat to an internal temperature of 71°C, and poultry to 74°C, checked with a food thermometer (for example by steaming, oven-heating or simmering in the marinade), then dry at around 55–60°C until done. Use lean, fresh meat and keep it chilled until it goes in.

Storing dried food: Let food cool fully, then store it airtight (sealed jars, vacuum bags or zip bags with the air pressed out) in a cool, dry, dark place. Home-dried jerky keeps about 1–2 months at room temperature per USDA guidance; refrigerate or freeze for longer. Throw out anything that shows mould, moisture or an off smell.

Care: Let the unit cool before removing trays. The plastic trays can be washed by hand or in the dishwasher (per supplier); keep water away from the base and wipe it with a damp cloth only.
