Store sealed in a cool, dry place away from moisture and direct sunlight. Reseal after each use, as bicarb absorbs moisture and odours and will clump if left open.

To check it is still active for baking, add a pinch to a little vinegar: it should fizz strongly. If it barely bubbles, use that batch for cleaning instead.
